Executive Chef Dominic Dsouza uses locally sourced ingredients to inspire a seasonal menu, whether you’re starting the day with a gourmet breakfast or dinner. Their lamb and eggs come straight from Nadia Lim’s Royalburn Station farm situated between Arrowtown and Wānaka. They’re the only station in the southern hemisphere with its own abattoir, meaning this is the closest you can get to true farm-to-table food. At Coronet Ridge he marries classical French techniques with New Zealand ingredients, reflecting his Indian heritage.
